Taking the flavours of Provence on the road
If “we are what we eat,” as the old saying goes, the same is true when it comes to what we cook. It should come as no surprise, then, that Christine Garcia’s catering service is perfectly in her image, showcasing the simple, sun-soaked flavors of her native Provence. After spending a quarter century taking care of others as a nurse and childcare worker, Christine decided to turn her passion for cooking into a full-time career, receiving a professional certification in the culinary arts at age 50. Since then, Christine hasn’t stopped learning. “When I don’t know something, I educate myself. I am always asking questions, and every time I have an opportunity to learn something, I’m all in!” Most recently, Christine received sustainability training from Écotable, and her catering business’s social and environmental commitments are starting to show: more local ingredients on the menu, green cleaning products, and support for La Roue—a complementary currency system that benefits the local economy.
