Celebrating the rich flavors of Basque country
Founded in April 2019 by Julia and Aymeric Henrotte, Manatee is a cozy café and coffeeshop opened by and for locals. Centrally located a stone’s throw from the central market in the seaside town of Biarritz in French Basque country, Manatee serves breakfast, brunch, and lunch, alongside an organic tea and coffee service, with coffee sourced from an artisanal roastery in nearby Bayonne. In the kitchen, chef Alexandre Célérier cooks only with seasonal products, with 90% sourced or produced locally. “I cook with what the seasons have to offer,” explains the chef. “It’s not for nothing that you can find certain ingredients at certain times of the year.” Cooked together, they naturally compliment each other.”
