Whetting city dwellers’ appetite for eating well
Located a stone’s throw from the Luxembourg Gardens, this small storefrontprovides a fresh take on takeaway classics, serving healthy, organic mealsmadewith seasonalproduce grown locally without pesticides. Take a peek inside the glass case facing the sidewalk, and instead of uninspired paninis and baguette sandwiches, you will find orange-grilled fennel, beef meatballs with paprika, beetroot mousse, curried cauliflower, or a medley of roasted carrots, sweet potatoes, and roasted butternut squash. For founder Emmanuelle Riboud, the idea behind Ressources was to give Parisians a taste for healthy, plant-forward cooking. Emmanuelle has worked hard to reduce Ressources’s environmental impact by serving takeaway food in recycled, reusable cardboard bento boxes, and moving forward, she would also like to find a sustainable solution for the kitchen’s food scraps—“lots and lots of fruit and vegetable peels”—by delivering them directly to farmers. Already, this small grab-and-go spot is having a big impact on the local customers it serves.
