A fine dining duet

Located in the historic center of Rodez, a small city in the south of France, ET Restaurant is one of the rare eating establishments in the area to actively support eco-friendly practices. Run by Émilie and Thomas Roussey—partners in life as well as in the kitchen—ET Restaurant features an ever-evolving menu highlighting seasonal products from the Aveyron region. Always experimenting with permaculture and agroecological practices in their own kitchen garden, the couple also works closely with several local, certified organic producers who use similar traditional farming techniques. The chefs are fervent advocates of sustainability in the food industry, and they are working on reducing waste as well to limit their restaurant’s environmental impact.
