A Normandy getaway
Built on the site of a former family farm, this elegant Normandy establishment has taken an ambitious approach to sustainability. Every aspect of this four-star hotel and restaurant has been designed to reduce its environmental impact: an energy-efficient water purifier, a rainwater collection system, and a pool heated by geothermal energy, to name a few of the eco-conscious initiatives put in place by Le Manoir’s owners, Camille and Hugues. The same standards apply to the restaurant, which works directly with a collective of local producers and livestock farmers to ensure the quality of their organic ingredients. Other products are sourced even closer to home: the fresh-churned butter comes from the farm next door, the shortbread biscuits are bought at the local bakery, and a variety of herbs are grown on site.
