Leading the way in sustainable cooking
In May 2019, Arkose—a pioneering group of bouldering gyms in France—expanded its operations to Rouen with a new location on the banks of the Seine. Built in a refurbished shipping warehouse, the multipurpose space serves both as a bouldering gym and an industrial-style bistro committed to featuring the local flavors of Normandy. The chef revels in revisiting exotic recipes with regional ingredients that have been rigorously chosen. The eco-conscious establishment has sought to reduce food waste with a bicycle composting service, and even takeaway has been redesigned with environmental concerns in mind. No more disposable containers, not even recyclable ones: the restaurant sells glass containers at cost and encourages customers to bring their own containers for takeaway orders.
