Since 2017, Marie Morisetti and François-Xavier Oliveri have fought to bring good food to the people of Cherbourg, a seafaring town on the English Channel in northern France. For the cofounders of this multipurpose bar and restaurant, the “challenge has been to actively seek out and raise awareness among those who haven’t given much thought to environmental concerns.” At Club Dinette, Marie and François-Xavier make it a point of pride to convince skeptical customers to try plant-based options featured on the menu. Open with a limited menu at lunch and as a full bar and restaurant in the evenings, Club Dinette also organizes a series of sustainability themed events called Blablapéros, DJed dance parties, and blind sushi tests spotlighting responsible fishing practices. Club Dinette never ceases to surprise, even in the slightest of eco-friendly details: in the hallway that leads to the restrooms (stocked with locally recycled toilet paper), you’ll stumble across a community closet supplied with gently used clothing by two charitable organizations in Cherbourg.
