Artisans for a sustainable future
When François Boulicault and Antoine Barré-Foncelle co-founded La Menuiserie, one thing was for sure; they wanted to open a restaurant that was aligned with their environmental and social values. Located across the street from the central market in Dijon, this neighborhood neo-bistro is a model of sustainable management: renewable energy from France’s only cooperative electric company, bicycle transportation and carpooling for deliveries and provisioning trips, and reusable takeaway containers that customers can return for a refund. François and Antoine work directly with local producers, and they make it a priority to treat their staff with respect. Staff meals are made with the same, high-quality products as those served to paying customers, and the restaurant management organizes staff outings as often as possible—most recently, to a French music festival.
