Gastronomy with a rock‘n’roll vibe

Can a restaurant be both refined and rock ‘n’ roll? Situated across the street from the Belfort-Montbéliard train station in Méroux, this retro-modern restaurant proves that even eco-conscious cooking can really rock your socks off. Out with the stuffy tablecloths, in with a Thai-style tiger’s tears seared tuna, or a traditional apple tart given a modern twist with a peach-lime kefir sorbet. Frédéric Pastorino, the convivial chef behind Cookovin, spent a decade in Ireland cooking everything under the sun before he met Romain and Corrine, his future suppliers. “They sell what are wrongfully called ‘ugly vegetables.’” But in truth, he says, “my kitchen works seasonally by their clock.” Preparing his dishes to a soundtrack that goes from U2 to the Dire Straits without skipping a beat, Frédéric adds: “Vegetables are the real star of the show. When I have quality ingredients, half of my work is done for me.” The rest, he insists, “is teamwork.”
