When Arkose—a pioneering group of bouldering gyms in France—expanded its operations to Bordeaux, the company couldn’t have found a more suitable location than this century-old, 1200 m2 cellar in the historic neighborhood of Chartrons. In addition to its bouldering walls and community coworking space, Arkose’s restaurant, which is open to the public, benefits from a brilliant, eco-minded chef whose eclectic, original cooking puts plants center stage, highlighting as many local, organic ingredients as possible. The kitchen also makes a conscious effort to limit waste by allowing customers to bring their own reusable containers for takeaway orders.
