Eco-conscious and chill
Since 2013, Arkose has been popping up all over France. In Toulouse, the bouldering gym-cum-restaurant set up shop in a 1700 m2 repurposed warehouse. The ambiance inside is pleasantly surprising, with a restaurant nestled right next to the climbing blocks. More than a mere restaurant, the space has the feel of a second home, whose simple, local, and seasonal cuisine encourages customers to linger and indulge. The chef is always in search of regional suppliers with sustainable farming practices. In the same spirit, he recently planted a community kitchen garden near the entrance to the parking lot, growing some of the edible flowers, legumes, herbs, and vegetables later used in his cooking.
