Bien Élevé
Sustainable meat, Locavore, Zero waste
French meat and sustainable farming
With Bien Élevé in the 9th arrondissement and Bien Ficelé in the 11th, opened in 2016 and 2018, respectively, this team of restaurateurs champions quality over quantity. Promoting an ecological principle with increasing popularity, the idea behind these meat-focused restaurants is simple: “when it comes to meat, eat less to eat better.”

“Meat is overrepresented in the majority of restaurants. While some restaurants import their meat from, say, Argentina, we wanted to support French meat by sourcing directly from producers.”
“The producers that we work with—Châteauneuf, Samuel Fouillard, and Licques—are all small, family-run farms and businesses.”
